Pudding Cookies and a Good Book

Y’all, I made these chocolate chip pudding cookies, and my soul was touched! To me, nothing beats a delicious, warm, gooey, chocolate chip cookie. They are a dessert for all seasons!
These cookies are not disappointing and easy to make. I hope you enjoy them as much as I did, curled up on the couch reading “The Alice Network”. This isn’t a book review post or I would get into more details... but this book.. oh my heart. I finished it on Mother’s Day and it was the perfect ending to a wonderful day. It was actually a pre-ending (a word I just made up) because it really ended on the porch with my honey bear, smoking a cigar and sipping some crown apple.. why crown Apple? Because it was all we had in the house. There are many other “sippers” I would have preferred, but still, a most perfect pre-ending to the perfect ending to a wonderful day.
Ingredients:
1 cup salted butter (softened)
3/4 cup brown sugar
1/4 cup sugar
1.5 teaspoon vanilla
2 eggs
2 1/3 cups flour
3.4 oz package instant vanilla pudding mix(add the dry mix)
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
A whole bag of semi-sweet chocolate chips..more or less to taste..
Directions:
Preheat oven to 350ºF.
Cream together the butter and sugars in a large mixing bowl. Mix for about 1-2 minutes until smooth and fluffy. Add in vanilla and beat in one egg at a time.
In a separate bowl, mix together flour, pudding mix, baking soda, baking powder and salt. Then slowly stir into the wet ingredients. Then stir in the chocolate chips.
Scoop Out even size scoops and Bake for 8-10 minutes, or until the edges are lightly golden brown. You want the center to look a little underdone. Let sit on pan for 2-5 minutes, and then remove to a cooling rack.
