A homemade(ish) spaghetti sauce, semi recipe

So last I wrote, I was reading “The Alice Network”. I highly recommend this book as a must read. Strong female leads during a time when women aren’t supposed to be strong. Nothing turns out how you want, but it works out how you need it to. It also shows the after effects of what being strong can do to a person, because anyone who has to endure war, does not get out unscathed. It is one of those books you have to wait a few days to start another book so that you can digest the book and let the characters leave your soul.

Now about this delicious sauce. I tried this because I love spaghetti but I’m tired of all the premise stuff. However, I didn’t really want to put in a ton of extra work for homemade sauce I wasn’t sure I’d like. So.. I got creative. I will never not do this again. So simple and quick, plus the house smelled amazing!
All I did was cut up tomatoes, I used the container of cherry tomatoes we had in the fridge. Chopped up a medium onion in big chunky pieces, and separated a whole garlic clove. I put all of that on a cookie sheet, drizzled it with olive oil and balsamic oil, and then baked at 350 for however long until it was done (just kept checking on it). Once it was done roasting, I put all of it in a sauce pan, added jar sauce, and kept on medium low heat for until it thickened up. I then blended it together with a hand blender and kept on low heat until the noodles cooked.
So so good with half the work!! I would recommend trying!! I also added some of my favorite seasonings and red pepper flakes because it was on the sweeter side and I don’t like sweet spaghetti sauce!
Grab a glass of wine, garnish with parm cheese, cozy up and enjoy!!
